Sometimes a Food Blogger Needs a Break

I’ve noticed a few food bloggers lately ‘coming clean’ so-to-speak and sharing some of the foods they eat in between those glorious food posts that we all get to read about. Two come to mind right away, The Three Bite Rule, who has started doing a “What I Ate” series, where she details some of the less fancy meals, those daily eats that she doesn’t necessarily make a concerted effort to share normally. Also, This is Rock Salt, recently did a post on her in-between blog post eats. I love seeing food bloggers being honest about this. Most of us have lives outside of our food blogs, and busy lives at that. We can’t always be cooking feasts and often times do what everyone does. Make something that gets the job done; something quick and easy.

I have had one of the craziest weeks of my life recently. After moving less than a month ago, I found myself having to pick up and do a whirlwind trip of 4 days/5 nights out to California. I found out I had to leave on Saturday, had my ticket booked on Sunday, and was getting ready to leave on Tuesday. I didn’t want to spend any more time than necessary Monday night making making dinner. I also wanted to do something that would be contained, meaning no leftovers to have to throw away. And things have been a jumbled mess since getting back with spotty phone service, no internet in our flat, and other things so photographing food, making recipes, and blogging about food has been low on the list!

During my last grocery visit I’d picked up some pre-breaded chicken breasts. I also had a bit of vegetables I wanted to eat up before I left. So, there you have it: easy peasy. The chicken would take 25 minutes to cook and I figured I could roast the veggies along side at the same time and have a quick meal done all at once that only required a preheating of the oven. I was then able to spend those 25 minutes getting packed rather than standing at the stove. I still felt the meal was generally healthy and it was definitely filling and even comforting. A good way to start off a very hectic week.

What kinds of quick meals do you do in a pinch that you might not consider blog-worthy, but definitely do the trick?

    OK. I confess. I had a Chicken & Mushroom Pot Noodle for lunch on Wednesday and a Fish Finger Wrap for tea on Thursday #blush
