One thing I felt we’d been missing in our meal rotation lately was fish. So, when I was trying to decide on a fish recipe, I decided a good old-fashioned pub-style baked cod sounded awesome. I used this recipe and it came out great!
Baked Breaded Cod
Ingredients
- 1/4 cup mayonnaise
- 2 tablespoons grated Parmesan
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup seasoned breadcrumbs
- 3 tablespoons flat leaf parsley, chopped
- 4 cod fish filets
Directions
- Preheat oven to 450 degrees
- Spray baking dish with cooking spray
- Combine mayo, Parmesan, lemon juice, salt/pepper
- Combine bread crumbs and parsley
- Place fish in the baking dish, and spoon mayo mixture on top. Then sprinkle the bread crumbs over the fish
- Bake 15-20 minutes or until fish is cooked through
This tasted just like something you’d get in a restaurant. Definitely need to make this again soon!
